As we shared last week, National Nutrition Month began on March 1, 2025! Aligned with this year’s theme of “Food Connects Us” the message for the second week of March is “Connect with a Nutrition Expert”. The important points of this weekly message from the Academy of Nutrition and Dietetics are:

  • Ask your doctor for a referral to an RDN.
  • Find an RDN who specializes in your unique needs. 
  • Receive personalized nutrition information to meet your health goals.

Cooperative Extension Agents and Educators can bring this message of connecting with nutrition experts to their communities by knowing the RDNs that work and provide services in your county or virtually in the state,  and referring community members to an RDN when questions arise that are out of your scope of practice. This week we are highlighting an Extension agent who is also a Registered Dietitian, EB Odom! Learn more about how being a Registered Dietitian impacts EB’s role in Extension below. 

Here are additional ways to get the community involved in this week’s sub-theme:

  • Sponsor a “Dial-a-Dietitian” event through a local radio or television station. Callers can ask nutrition questions for a Dietitian to answer. 
  • Plan an in-person or virtual cooking demonstration or nutrition event and invite a Dietitian to provide a brief nutrition presentation. 
  • Use this search tool from the Academy of Nutrition and Dietetics to find a nutrition expert in your area. 
  • Celebrate National Registered Dietitian Nutritionist Day (RDN Day) on March 12th and feature Extension professionals who are RDs, RDNs, and NDTRs. A list can be found here. If you are an RDN and don’t see your name on this list, please add it so that we can celebrate you!

Learn more about Registered Dietitian and FCS Agent EB Odom:

EB Odom was born and raised in Halifax County, where she now works as a Family and Consumer Sciences agent. NC State Extension played an important role in EB’s life from a young age, as her mother was a 4-H club leader and volunteer. EB graduated from East Carolina University, became a Registered Dietitian, and spent 17 years serving Halifax County through public health. She frequently collaborated with Extension’s FCS programs. In 2015, EB moved into her “dream job” of joining NC State Extension as a dual-county FCS agent for Halifax and Northampton Counties. 

As a Family and Consumer Sciences Agent, EB provides research-based education in the areas of nutrition, cooking, food preservation, fitness, and chronic disease prevention. She works with a wide variety of age groups in both counties, with a particular focus on limited-resource populations through Steps to Health programming. Beyond traditional programming, EB’s work includes community-level initiatives promoting nutrition and physical activity through policy, system, and environmental improvements. 

“The core of all NC State Extension county FCS programs is nutrition, health, food safety, food preservation, and local foods systems. My background as a Registered Dietitian and my experience in public health are a perfect fit for delivering these core programs. I’m able to translate evidence-based curriculum into practical, local solutions for our community. Furthermore, my strong connections within the healthcare sector have been invaluable, fostering impactful collaborations that enhance  our programs.”
